Hi Vincent I let my globe artichoke completely die down and when it produced the new plant - that's when I cut off the old stems. Not sure if that's how you're meant to do it, but it worked wonderfully for me and I had a bumper crop the following year.

Leave them grow as naturally as possible, keep well fed and your blooms will be better than ever next year.
